"My Boys", though technically one of my boys is a man. That man, my awesome boyfriend, came into our lives a little over a year ago. Bringing something amazing to the table, and making us add a fourth chair to the dinner table. We added that chair a few months into our relationship, when he came to meet the boys for the first time, on Easter 2009. That would be the first of many family meals together. Though the meals have gotten better, as I became more interested in cooking, and especially baking.

Why did we only have 3 chairs? Because the kitchen in my apartment is pretty small, and I have no dinning room. So to save space, I pushed the table against the wall, and removed the fourth chair. Now that chair is back, and I'm using my kitchen more than ever, it's kind of ironic.

Though my space for doing what I enjoy is small, it works for me. I use my table for most of my work, and only have mild back pain. A taller table is definitely on my wish list.

One of my favorite things to make my boys are muffins! They are easy, quick, and make a great snack to take to school. Plus, they're a great way to get rid of bruised bananas.

I found a great recipe for Banana Crumb Muffins, on All Recipes.

For the crumb topping:

1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

For the batter:

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt

3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted

Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.

In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal.

In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt.

In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

Sprinkle topping over muffins.

Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
